The Farmer’s Diner won’t be part of UVM’s new Dudley H. Davis Center, according to its Quechee-based owner, Tod Murphy. The problem? The cost of leasing the space was “significantly more than what we thought we’d have as a profit margin,” Murphy explains. “There were some good philosophies and other reasons to pursue it,” he says, but the numbers weren’t crunching the way he wanted.
Paul Bahan of University Dining Services says the resulting vendor vacancy has yet to be filled. “We’re talking to several parties . . . We hopefully will be making an announcement soon.”
In the meantime, Murphy is considering other ways to get into the Chittenden County market. “We’re going into the summer season, so we have plenty to focus on here,” he says. “But we have a group of investors who are looking for opportunities.”
